It's the olive harvest time in Italy, marking a vibrant and vital time in the agricultural calendar. As autumn settles across the land, our beloved olive oil producers, Frantoio Muraglia and Frantoio Galantino, are hard at work. For them, this season marks a time when generations of expertise come together to create truly exceptional extra virgin olive oils.
 
The meticulous process of transforming olives into oil typically takes place from late September to early November. Farmers carefully monitor their trees, waiting for the fleeting moment when olives are perfectly ripe but not overmature. Handpicking, while time-consuming and labor-intensive,  allows for selective harvesting and ensures that only the finest olives make it to the mill. This careful attention to detail is crucial for producing highrest-quality olive oil.
 
At Frantoio Muraglia, olives are gathered from centuries-old trees, some of which are over 450 years old. Their commitment to traditional methods, including the use of a stone mill for gentle crushing, ensures that their extra virgin olive oils are of the highest possible quality. They specialize in monocultivar oils, made from single olive varieties like Peranzana and Coratina, each offering distinct flavors that reflect Puglia's unique terrior. Frantoio Galantino also sticks to time-honored techniques, focusing on sustainability and the preservation of biodiversity in their olive groves. Their cold-pressed oils are rich and flavorful, a celebration of Italian olive heritage.
