The Most Indulgent Cherry Tart

Amaretto Cherry Tart

Wonderfully indulgent, this tart recipe features our amaretto cherries by Lazzaroni as the literal cherry on top of a sweet almond mascarpone filled shortbread crust. 

 

Ingredients

2 cups shortbread cookies, crushed

6 tbsp light brown sugar

1/2 cup toasted almonds, finely ground

3 tbs unsalted butter, melted

1/2 tsp salt

1 jar of Lazzaroni Amaretto Cherries

2 tbsp water

1 tsp plain gelatin

2 cups mascarpone

1/2 tsp vanilla extract

 

Instructions

Preheat oven to 350°F.

In a bowl combine shortbread crumbs, 4 tbsp of the light brown sugar, almonds, butter, and 1/4 tsp of salt. Press into a standard size tart pan. Bake for 15 minutes or until light golden. Allow to cool completely.

Combine water and gelatin in a small bowl. Microwave for 20 seconds or until gelatin is completely dissolved. Cool to room temp.

In a bowl, whisk together mascarpone, remaining 2 tbsp brown sugar, vanilla, pinch of salt, and cooled gelatin. Whisk until smooth.

Spread mascarpone mixture into cooled tart shell and top with amaretto cherries.

Chill 30 minutes before serving.
