Spaghetti all'Assassina
Native to Bari,"Assassin's Spaghetti" is the literal translation for this dangerously tasty pasta dish that features a hot, chili pepper tomato sauce married with a unique way to cook pasta.

Ingredients
500g Zia Pia Organic Spaghetti
500ml Italianavera Passata di Pomodoro
200ml water
75ml Galantino Garlic Olive Oil
75ml Galantino Chili Olive Oil
salt to taste
Instructions
Simmer 200ml tomato puree with 200ml water and salt to taste.
Sauté 75ml garlic oil and 75ml chili oil in a large, deep skillet. Pour 300ml tomato puree into the skillet, cook for 2 minutes. Add spaghetti into the skillet.
Once the spaghetti begins to brown, gradually add (a ladleful at a time) the simmered tomato puree with water to cook the pasta like a risotto. Continue stirring until the spaghetti is cooked through and browned.
