This delicious red tomato sauce is flavored with aglio orsino, or “bear’s garlic,” the wild cousin of common garlic. This edible, medicinal plant thrives in the undergrowth of mountain beech forests, bursting into white blooms each spring and rich in vitamins and minerals. After hibernation, bears feast on this plant, inspiring its name. This delicious sauce combines the distinctive aroma of wild garlic with rich tomato pulp.
