This 3-2-1 formula is a sure way to make a balanced salad dressing at home, every time. Make a dressing that elevates your salads and greens, not weighs them down.
The 3-2-1 Vinaigrette Formula
The golden ratio for vinaigrette is simple:
- 3 parts extra virgin olive oil
- 2 parts acid (vinegar or citrus)
- 1 part emulsifier + seasoning (Dijon mustard, honey, salt, pepper)
That's it. Everything else is a variation on this theme.
The Classic Italian Vinaigrette
Makes enough for 2–4 salads
- 3 tablespoons Zia Pia Extra Virgin Olive Oil
- 2 tablespoons Zia Pia White Wine Vinegar
- 1 teaspoon Dijon mustard
- 1 small garlic clove, minced (optional)
- Salt and freshly cracked black pepper
Combine all ingredients in a small jar. Seal and shake vigorously for 30 seconds. Taste and adjust. That's it.
Variations to Try
Honey Lemon- Replace white balsamic with fresh lemon juice. Add 1 teaspoon of honey. Extraordinary on arugula with shaved Parmesan.
