Artichokes have been a staple of Italian kitchens since ancient Rome, prized for their earthy sweetness and versatility. These are grilled, marinated in fragrant EVOO, and here they form the base of a silky, savory sauce that comes together in minutes.

1 jar Grilled Artichokes in Extra Virgin Olive Oil

Your favorite short pasta like Zia Pia Organic Gigli or Zia Pia Organic Trecce

Freshly grated Parmigiano Reggiano

Red pepper flakes

Instructions
Bring a large pot of water to a boil and salt it generously.
Meanwhile, drain the jar of artichokes over a bowl to reserve the oil. Set aside a generous a few artichokes for garnish. Add the rest to a food processor with about ¼ cup of the reserved marinade and blend until smooth. Adjust the texture with more marinade if needed and season to taste with salt.
Cook the pasta until al dente, following package instructions.
While the pasta cooks, slice the reserved artichokes in half lengthwise.
Before draining the pasta, scoop out about a cup of the cooking water, set aside.
Drain the pasta and toss in a bowl with the artichoke purée, a handful of grated Parmigiano Reggiano, and a pinch of red pepper flakes. Add a splash of pasta water if needed to thin the sauce until it reaches the desired consistency.
Top with the artichoke slivers, more cheese, and an extra pinch of pepper flakes if you like a little heat.
