DOP Terra di Bari Castel del Monte Extra Virgin Olive Oil is produced by cold extraction with olives hand-picked in the region surrounding Castel del Monte near Bari. The main olive varietal is Coratina (80%) with other olives native to the region comprising the remainder. An independent certification organization guarantees its origin, typicality, quality and adherence to strict specifications. Harvest takes place prior to December 31st, and the olives are pressed within 24 hours of picking using a traditional granite mill. Green in color with yellow reflections, its full fruit character is complemented by lingering bitter and spicy notes that are typical of southern Italian olive oils. Use it as you would any fine EVOO, as a seasoning for vegetables, drizzled over legumes, added to soups, atop bruschetta, or for preparing grilled meats.

MEET THE MAKER

In the green valley at the bottom of Monte Subasio right between Assisi, Perugia and Spoleto – jewels of the geen Umbria region – there is the ancient factory of Antico Pastificio Umbro producing pasta and rice in the old traditional way. Around 1921-1925 a few elder workers learned the method of using bronze extruders and cutting the pasta by hand which dries slowly for a long time. The pure waters from the small rivers of Monte Subasio gives a healthy consistency to the pasta. You should definitely taste this pasta made in the area of medieval small towns full of heritage and green landscapes.
