Easter has passed, but if you're lucky enough to have a slice (or two) of Colomba left, this is exactly how to use it!
Leftover Colomba is the star of this post Easter brunch recipe, something we like to call the Colomba French Toast.
Ingredients
Colomba sliced into 1in thick pieces
2 Large Eggs
1/2 Cup Whole Milk
1 Tsp Vanilla Extract
1/4 Tsp Ground Cinnamon
2 Tbsp Butter
Powdered Sugar or syrup for finishing
Instructions
Slice your leftover Colomba into 1 inch thick pieces.
Whisk together eggs, milk, vanilla extract, and cinnamon.
Soak each slice of Colomba for 30 seconds on each side or until the slice is fully saturated.
Let butter melt in a pan over medium heat.
Add Colomba into the pan with melted better and fry each side until golden brown.
Finish with a dusting of powdered sugar or syrup.
Pair with your favorite brunch beverage and enjoy!
