All of our producers share the philosophy of embracing quality and flavor above all else and practice traditional farming methods with no pesticides and an emphasis on nature and simplicity. This is why (we think) our products taste better than their industrial counterparts.
Truffle hunting is a popular pastime in Tuscany and Umbria, and in the summer months, truffles are gathered to make Salsa Tartufata — Summer Truffle Sauce — which is made with Italian summer truffles combined with countryside mushrooms and black olives, cooked in olive oil with a touch of garlic and lightly seasoned with salt and pepper. Summer truffle sauce is excellent served slightly warmed with extra virgin olive oil on bruschetta, spaghetti, meat, or fish. Mushrooms go extremely well with pasta, the rich earthy flavours a perfect complement to sauces, which vary from city to city and region to region.
