Cicerchie are a primitive version of the chickpea, in fact they are often described as wild chickpeas. Their flavor is richer and earthier thank chickpeas, closer to the taste of fava beans or split peas. They have an unusual shape – like disfigured corn kernels, which adds to their unique charm! Give them a good soak and boil them to add to salads with some good olive oil, or use them in your favorite soup or meat stew. You can also puree them like chickpeas, add some olive oil, garlic and rosemary, and spread on crostini for a delicious antipasto.

Cicerchie have been cultivated since ancient times in the poor soils of the Sibillini Mountains. Often farmers cultivated the Cicerchie on marginal land, between the rows of vines, to secure a source of protein throughout the year.
The beans require a soak period of about 24 h, substituting water two to three times during that time. Cicierchie are perfect for soups as well as mashed.

La Chiona is an estate located in Spello, an ancient walled town in the Southern Umbria Valley. Their focus is on quality, authenticity and nutrional value, producing many hard-to-find grains and legumes native to the region. They use no fertilizers or pesticides, and harvest and package their products according to their singular objective to preserve the original integrity and nutrients.
Since 2004 the farm has been fully dedicated to the cultivation of local and ancient varieties, that grow in the Umbria Region and surroundings. Today they grow and harvest local varieties of cereals and grains.
