For this decadent chocolate panettone, Filippi chose a high-quality chocolate genetically identified as Forastero, derived from very precious cocoa, corresponding to less than 10-percent of world’s crop. It has a moderately bitter taste, and with a slightly hazelnut-citrus flavor.
